Why it crystallizes
Raw, unfiltered honey can crystallize over time. It changes nothing about its quality — often it is a sign the honey was never heated. Stand the closed jar in warm, not boiling, water for 30 minutes to an hour.

Let the tea cool a little first. Below about 105°F (41°C) the honey's natural enzymes survive.

At room temperature, out of direct sunlight. Stored properly, it keeps almost indefinitely.
