Health benefits
The EU allows olive oil one health claim, word for word: “Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress.”
It applies only above a measured line: at least 5 mg of hydroxytyrosol and its derivatives per 20 g of oil, about 1½ tablespoons a day. The line is measured oil by oil, in the lab.
Polyphenols are the olive’s own antioxidants. Hydroxytyrosol and tyrosol are the ones the EU claim is about. Oleocanthal is the one that catches at the back of your throat. They make fresh oil bitter and peppery, and they fade as the oil ages, which is why the harvest date is printed on the bottle. This batch measures 548.9 mg/kg total polyphenols.
The rest is the fat itself. A tablespoon has 14 g of fat, 11 g of it monounsaturated, mostly oleic acid. In the U.S., the FDA allows this qualified claim: “Limited and not conclusive scientific evidence suggests that eating about 2 tablespoons (23 grams) of olive oil daily may reduce the risk of coronary heart disease due to the monounsaturated fat in olive oil. To achieve this possible benefit, olive oil is to replace a similar amount of saturated fat and not increase the total number of calories you eat in a day. One serving of this product contains 14 grams of olive oil.” See the nutrition facts for fat content.
Food, not medicine. A spoon a day is a habit, not a treatment.

The lab analysis
Measured on this batch by an independent laboratory, to IOC methods:
- Total polyphenols — 548.9 mg/kg
- Free acidity — 0.20%. The EU limit for extra virgin is 0.80%
The PDF linked above is the full report of its sister bottle, the EVOO Centenarian: same producer, same harvest. The EVOO's two figures are on it.
The polyphenols are not printed on the bottle: they are measured right after pressing and slowly decline as the oil ages, so a printed number would not stay true.
Why it is filtered
Filtered through diatomaceous earth and cellulose. The water and fine olive particles left in an unfiltered oil shorten its life. Taking them out is what keeps the oil stable in your kitchen.
Storage
Cool, dark, tightly sealed — and never in the fridge.
Unopened, best before 24 months from bottling, as EU rules require. That is a guide to peak quality, not an expiry date. Once opened, use it within one to two months.
Shipping and returns
Free U.S. shipping from $45; a flat $7.99 below that. One bottle of EVOO gets you there. We ship to the U.S. and Canada, from Birmingham, Alabama, within 2–3 business days; shipping to Canada is calculated at checkout.
Unopened bottles can be returned within 30 days of delivery. If your order arrives damaged, we replace it or refund it. Opened food is final sale. The details are in our Returns & Refunds policy.
The daily spoon
About twenty-eight spoons a bottle. Four weeks at one a day.
The bottle for every day: dressing, finishing, cooking. The spoon a day comes out of it too.

The lab analysis
Measured by an independent lab, to IOC methods.
The two numbers that matter most, from this batch's own lab report. Same producer and same harvest as the EVOO Centenarian, whose full report is published.
What it tastes like
Green almond, artichoke, then the catch.
Take it straight and you might cough. That's oleocanthal, one of the polyphenols, and it's the quickest check you can do yourself.

The five marks printed on every label

One number is not on the label: the polyphenolsThe polyphenols are measured per batch, in the lab, right after pressing. From that day on, they start to fade. Slowly in a sealed bottle, faster once it’s open. A number printed on the label would be true on the day of the test and a little less true every day after. We’d rather not print something that stops being accurate. So it lives in the analysis, published here, with the date on it.
